CHICKEN RISOTTO RECIPE
Mums will love this chicken risotto. Packed full of Italian herbs, succulent chicken and mushrooms, this classic Italian rice dish is deceptively simple to make. It’s already super filling, so is best enjoyed on its own or with a light side salad.
CHICKEN RISOTTO RECIPE INGREDIENTS
3 chicken breasts chopped
300g Arborio Risotto rice
1 ltr chicken stock
1 onion diced
3 Garlic Cloves minced
1 Handful of chopped mushrooms
1 splash lemon juice
Dried Italian herbs for seasoning
Garden Peas, handful
Parmesan (to serve)
In a non-stick wok, chop and fry three chicken breasts then add in one diced onion stirring until golden.
Add three minced garlic cloves and a handful of chopped mushrooms and fry for another five minutes. Sprinkle in some Italian herbs, then add a splash of lemon juice and a splash of Worcester sauce.
Now add 300g of Arborio rice, 1 litre of chicken stock and allow to simmer for around 40 minutes. Keep stirring throughout.
5 minutes before it’s ready, add a handful of peas and some fresh spring onion.
Serve with black pepper and parmesan, to taste.
Enjoy with a juice or a glass of bubbly to toast the occasion!
