Coqopan is a new piece of ovenware designed specifically for cooking chicken. It comprises a base tray, which acts as a reservoir for the cooking liquid, and a unique, perforated cone on the lid, where the chicken is placed, upright. Its purpose is to reduce cooking time dramatically compared with conventional roasting techniques. Moisture loss is also significantly reduced. When conventionally roasted, different parts of a chicken cook at different speeds. The inner thigh and the breast meat nearest the carcass are the last to reach the cooked temperature, being furthest away from the source of direct heat; by this time, the outer breast meat has lost moisture. Chickens can also lose over 30% of their overall mass during traditional roasting which is countered by things like basting and covering with foil, both of which result in heat loss as the oven door is opened.
How to cook with Coqopan
Simply fill the base tray with 500ml of water and place the lid on top. Then position the chicken onto the cone part of the lid, in an upright position, making sure the cone fills the inner cavity of the chicken. Set the temperature and calculate the roasting time based on 20 mins per kilo plus ten minutes. And that’s it! No checking, no basting, no opening the oven door to let out all that precious heat! Your chicken will be cooked thoroughly, evenly, quickly and with more moisture and juiciness than ever before!
What makes Coqopan so different from standard roasting methods?
Coqopan contains liquid in the base tray which sits beneath the lid where the chicken sits. The wide surface area of the base allows the water to boil quickly. The lid and base form a sealed container, from which the only point of exit for the resulting steam is through the perforations in the cone and into the cavity of the chicken. Because the chicken sits vertically, the legs fall away from the body, allowing the inner thigh to come into direct contact with the heat of the oven. Cooking this way, from the inside as well as the outside, massively reduces the time needed for your chicken to cook through.
Save space and retain all those essential cooking juices
Coqopan is designed to take up no more than half of one shelf in most domestic ovens. This means there’s room next to it for a separate tray for roasting vegetables and potatoes. The lid retains the fats because there’s no basting required, and the base tray adopts the flavours for gravies, sauces and stocks.
